Pork wrapped in more pork? Where do I sign up? This Slow Cooker Bacon Wrapped Pork Loin was incredibly delicious! It is fancy enough for a dinner party and easy enough for a weeknight meal.
We loved this dish. It reminded us a lot of our favorite porchetta appetizer. The appetizer is served with a fig jam and it is amazing. Since the pork loin had the flavors of porchetta, I decided to add a simple dijon fig jam glaze to the slow cooker. OMG! SO good! Make sure you spoon some of those yummy juices over the cooked pork loin. You don't want to waste them!
How to Make Slow Cooker Bacon Wrapped Pork Loin
This dish is super easy to make. It takes about 5 minutes to prep the pork for the slow cooker. Just season the pork loin with some garlic, rosemary, salt, and pepper and wrap it in bacon. Place the pork in the slow cooker. Mix together fig jam and dijon mustard. Pour over the pork. Cover the slow cooker and cook on LOW until the pork reaches 145ºF.
- The bacon wrapped around the pork loin will be fully cooked when the pork loin is done. BUT it won't be crispy. I carefully took the pork loin out of the slow cooker and popped it under the broiler for a few minutes until the bacon was nice and crispy. That is totally optional, but I think it tastes (and looks) better.
- This recipe uses a center-cut pork loin and not pork tenderloin. Pork loin and pork tenderloin are NOT the same and should not be substituted for each other. They are cut from different parts of the animal. They also look really different — pork tenderloin is thin and small, while a pork loin is wide enough that you can cut steak-like pieces from it.
- Pork is safe to eat when it reaches an internal temperature of 145ºF. The pork will have a blush of pink and that is perfectly safe!
- Do NOT overcook the pork. Overcooking the pork will make it dry and tough. Cooking the pork to 145ºF will ensure a tender and juicy pork loin.

- 1 (3 to 4-lb) center-cut pork loin
- ¼ cup brown sugar
- 1 tsp garlic powder
- 1 tsp dried rosemary
- ¼ tsp red pepper flakes
- salt and pepper to taste
- 10 slices bacon uncooked
- ¼ cup fig jam or preserves
- 3 Tbsp dijon mustard

Combine brown sugar, garlic powder, rosemary, red pepper flakes, salt and pepper.

Season pork loin with brown sugar mixture on all sides.

Wrap bacon around pork loin and place in slow cooker.

Mix together fig jam and dijon mustard. Pour over pork loin.

Cover and cook on LOW 4 to 5 hours.
